Word:    Maltodextrin

Short Definition:
  Maltodextrin is a sweat, easily digested carbohydrate often made from cornstarch.

Definition:
Corn starch is cooked, and then acid and/or enzymes are used to break the starch into smaller chains (3-20 chains in maltodextrin). These chains are composed of several dextrose molecules held together by very weak hydrogen bonds.

It's also known as multidextrose or glucose polymer powder and is a synthetic polysaccharide, a complex carbohydrate. Maltodextrin is often used by athletes to help meet high energy demand such as performing in triathletes. Although complex, Maltodextrin is susceptible to rapid enzymatic degradation and is digested and absorbed fairly rapidly, therefore is has a high glycemic index.
