  A measure of carbohydrates' affect on blood sugar

Definition:
The glycemic index (GI) is a ranking of carbohydrates on a scale from 0 to 100 according to the extent to which they raise blood sugar levels after eating. Higher blood sugar levels result in higher levels of the insulin hormone and corresponding insulin reaction. Foods with a high GI are those which are rapidly which signals the body to store fat and not burn existing body fat. Low GI diets have further benefits for weight control because they help control appetite and delay hunger.
